She’s the talented baker, graphic designer, and entrepreneur with a buttercream dream – and she calls the Moreton Bay Region home.
Zoe Dalrymple is the driving force behind Confetti Cake Co., a North Brisbane-based cake design studio which specialises in celebration cakes and desserts with a difference.
After the wedding and event industry took a big hit amid COVID-19, Zoe was quick to cook up a new range of ‘Isolation Treats’ to help counter the shift in the market, all while keeping people connected.
Speaking to Moreton Bay Tough, Zoe explains that April and May are usually among the busiest months for the wedding industry.
“Luckily, I had the majority of clients choose to postpone or organise credit to use at a later date, which has helped alleviate a bit of the stress that comes with three solid months of bookings being wiped clean,” she says.
The buying restrictions and unavailability of products also made it “really tough” for Zoe and her business.
“Not only was there nothing on the shelves but, when there was, I was limited to how many of each item I could buy,” Zoe says, admitting she is still waiting to see what everyone is doing with those extra bags of icing sugar!
Like many owner-operators in the Moreton Bay Region affected by COVID-19 restrictions, Zoe needed to adapt or face being left behind.
A true innovator, she dusted off her apron and got back to doing what she does best – along with her quirky sense of style, of course.
“I introduced our Isolation Treat range and ‘Love Ya Face’ cookies not long after lockdown started,” she says of her new line of products.
Isolation Treats include mixed cupcakes by the dozen or half-dozen (along with allergy-friendly and vegan options), as well as delicious mini celebration cakes.
For something a little out-of-the-box and fun, the ‘Love Ya Face’ cookies are just that – a unique set of cookies with your face, your mum’s face, your friend’s face, it doesn’t matter!
Pick a flavour, choose your quantity, send in a photo, and Zoe will work her magic.
The cookies come in a six, 12 or 20 pack, and each cookie is individually heat-sealed in a cellophane bag for freshness.
They can be collected from the Dayboro studio, or delivered anywhere in Australia.
Even throughout isolation, Zoe says people are still taking the time to say ‘I love you’ from afar, with special deliveries in the form of cupcakes, mini cakes and cookies hitting doorsteps for birthdays and anniversaries.
“We have been express posting boxes of our ‘Love Ya Face’ cookies all our Australia,” she says, with some orders coming from as far as Western Australia.
Mother’s Day provided a much-needed boost in sales, with Zoe revealing it was the busiest weekend of its kind in the three years she has been in business.
“I made over 300 cupcakes in two days, and spent close to 11 hours driving all over Brisbane doing deliveries,” she says.
As restrictions continue to ease across Queensland, consumer confidence also appears to be on the rise.
“Requests for small party cakes and desserts are starting to pick up and, slowly but surely, wedding enquiries for next year are coming through again,” Zoe says.
She’s even had some couples opting for a small wedding and small cake now, with plans for a bigger party and original cake design at a later date.
“A lot of peak dates for 2021 are already booked out, and I anticipate that the wedding season might be a little bit longer and a lot busier next year!”

Living in the Moreton Bay Region hinterland, that’s not a problem for Zoe.
“I'm based in Dayboro, which means I have access to the freshest of eggs and lots of locally-sourced fruit and edible flowers for my designs,” she says.
Zoe’s confessed style is “whimsical with a dash of vintage flair”, and a cup-load of creativity is added for good measure!
“I have a background in graphic design, and prior to launching Confetti Cake Co., worked for over 15 years in the industry,” she says, using her eye for design to her advantage.
“I like to think about cake in the context of the whole event, not just a standalone piece in the corner. So, I’ll often ask clients for their colour palette, invitation design, and the decorations or flowers to get a better understanding of the look and feel.”
At Confetti Cake Co., it’s the attention to detail that really sets Zoe’s work apart.
“Oh, I also make a dang good tasting cake – always with loads of flavour, and they taste as good as they look!” she adds.
With flavours like ‘The OG’ (fluffy vanilla bean cake with vanilla buttercream, layered with crushed raspberries) and ‘Pump up the Jam’ (white chocolate raspberry mudcake with a raspberry buttercream), it’s not hard to see why these cakes are so popular.
Zoe may be running a one-woman show, but she has some exciting plans for growth in the pipeline.
“I'm really close to finishing construction on a separate kitchen for the business, which is much, much larger than my current workspace,” she says.
“In the future, I hope to hold classes and a variety of cake-related events in the space.
“I'm working hard on marketing and content for the business, plus some new cake flavours and locking in a few permanent additions to our online store for last-minute cakes and cookie designs.”
